Jalapeno Popper Stuffed Chicken

Jalepeno Popper ChickenI’ve been meaning to post this for MONTHS now! BUSY, BUSY!! Have you ever had a jalapeno popper? They’re SOO good! It’s a jalapeno pepper stuffed with a cheese mix and wrapped with bacon. The first time I had one was in Korea from a dear friend, another army wife. Now take that deliciousness and wrap it up in a chicken breast and this is what you get!

Puffed Up Pizza Casserole

Friday Night = Pizza Night. No ifs, ands, or buts about it! 

Sometimes we order delivery, sometimes we make it from scratch and every once in awhile I’ll sneak in a new recipe. The latest was this Puffed Up Pizza Casserole, or “Upside Down Pizza” to Bebo. The boys all loved it! I logged it in MyFitness Pal as 8 servings and each piece ended up just over 500 calories. Continue reading

Super [Easy] Snack Smoothie

SmoothieDo you have trouble getting your kids to eat fruit? Okay lets be honest, do you have problems getting enough fruit yourself?? I’m not a fruit eater, I love the flavors but not crazy about most of the textures (don’t tell my kids!). I’ve finally mastered an EASY PEASY smoothie to whip up anytime at home. The worst part of it all is cleaning the blender! I make this and split it with my boys. If you drink the entire thing it’s less than 300 calories!! I drink half so it’s the perfect 3-4pm snack to hold us over ’til dinner.

It’s really as easy as 1-2-3!!
